Spring is here !Bring on the raw greens :)
This is an easy peasy lemon squeezy salad.
All you need :
raw asparagus
fennel bulb
pinenuts
walnuts
fresh lemon
olive oil
honey
salt
pepper
..That's it
The cool factor is the shaved asparagus. It's a different spin on an old favourite veggie.
Steps
1. Use raw asparagus and raw fennel (serving size depends on group). I used a dozen average size asparagus and 2 bulbs of fennel.
2. Take the tips off the asparagus and throw in bowl, take the very ends off and discard
3. Use a peeler and peel asparagus length wise. You'll end up with long shavings.
4. Take the bulbs of the fennel and cut up into big chunks. Throw in bowl
5. Roast some pine nuts and walnuts under the broiler until a little brown a fragrant. about 1 min or more depending on strength. Then toss in bowl
6. Mix together a few glugs of oliver oil, juice from half a lemon, a teaspoon of honey and salt and pepper to taste.
Mix together in the bowl and serve chilled. Voila.
