Preparing Black Beans from Scratch

Black beans are a delicious and versatile source of protein, fiber, antioxidants and many other nutrients including folate.

Learn in this video how to cook them from scratch and then make a very yummy cold bean salad.



How to make beans from scratch:

* Soak 1 cup black beans & 3 cups water for 3 hours.
* Rinse beans and cook with 3 cups water.
* Bring to boil, then let simmer with lid on for 2 hours.
* Beans are ready when you can cut them with a knife.
* Serve any way you like.

Ingredients for salad:

* 1-2 cup black beans (cooked)
* 1 avocado (chopped)
* 1 red pepper (diced)
* a handful of chopped coriander
* 3 tbsp pumpkin seeds

Dressing:
* juice of 1 lime
* 2-3 tbsp olive oil
* 1-2 tsp cumin (to taste)
* salt and pepper
