Halloween is over and now what can you do with these pumpkins???? Our babkas definitely would not have thrown them away.....but instead made them into a delicious pumpkin puree that can be used in all sorts of recipes like soups, muffins, cookies, pies and more! (see muffin recipe below)
Pumpkin Muffins
- 1.5 cups of all-purpose flour
- 1 tsp baking powder
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp allspice
- 1/2 tsp ginger
- 1/4 tsp nutmeg
- 1/4 tsp ground cloves
- 1 cup sugar
- 1 cup pumpkin puree
- 3/4 cup vegetable oil
- 2 eggs beaten
- 1 tsp vanilla extract
Directions
- In a large bowl add the sugar, pumpkin, oil, eggs and vanilla. Beat well to combine.
- In a smaller bowl stir the flour baking powder, baking soda, salt and spices.
- Add the dry ingredients to the wet ingredients and stir just until moistened.
- Spoon into greased muffin tins, filling 2/3 full.
- Bake at 350 for 18-20 minutes.
- Makes 1 dozen muffins.
