Gingerbread Cookie Recipe


Recipe from:
Quilters Cooking Creations, Chilliwack, BC


1 cup softened butter
1 cup sugar
1/2 tsp salt
1 egg
1 cup molasses
2 tbsp vinegar (weird, I know!)

Mix the first 6 ingredients together. The stir together and mix in:

5 cups flour
1 1/2 tsp baking soda
1 tbsp ground ginger
1 tsp cinnamon
1 tsp allspice

Let sit for one hour in the fridge, covered.

Now,

1. Roll out your dough section by section. The cookies barely rise, so roll the dough as thick as you want the cookies.

2. Use cookie cutters (or a mug) to shape cookies.

3. Bake cookies on parchment paper lined pan at 350F.

Cooking Time:

Crunchy cookies: 7 minutes.
Chewy cookies (my fave): 5 minutes.

Tips:

* You can refrigerate your dough for over a week and it will last!
* You can freeze your cookies, and they will still be chewy and delicious!

Gift idea:

Decorate an old canning jar, or pick up a few xmas tins at the dollar store (Dollar Giant in Victoria on Douglas) and fill them up with your favorite baking item to give to family and friends :))
